Moinak Mitra; ET Bureau
Domino's pizza comes with a 30-minute guarantee from the time an social club is placed. If the time taken to deliver the pizza is more than than 30 minutes, the pie comes free if it costs under Rs 300.
And in instance information technology costs more that amount, the visitor subtracts Rs 300 from the bill. In case it is more than iv pizzas, it is regarded equally a bulk order and the guarantee does not utilize. So by and large, all processes at Domino's are geared to see the thirty-minute deadline.

Blistering takes 6 minutes
When a customer calls, the order is flashed on the kitchen screen. The pizza maker looks at it and gets downward to the job at mitt. There is the obvious dough stretching, saucing and cheesing, and depending on the nature of the guild, 'itemizing' or topping, before it goes into the oven.
Blistering takes 6 minutes from where information technology goes to the cut table.
Finally, it lands up on the routing table where information technology is packed as per order in pizza commitment boxes (read: warm bags) that SDPs carry to the last mile. "On average, we deploy 6-7 people on the procedure depending on the store size," says Harneet Singh Rajpal, VP-Marketing, Domino's Pizza India.

How the 30 minutes divvy upwards
So this is how the 30 minutes divvy up. From order to oven, information technology should not take more than 4 minutes. Since the oven takes six minutes to bake; cutting, packing and pick-up brand up for, say, another five minutes. And commitment time should never exceed eight minutes. Add all that-information technology'southward a neat 23 minutes.

Seven minute buffer time
"Nosotros're designed to deliver in 23 minutes and give a seven infinitesimal buffer to our employees for unforeseen traffic, rains etc.," says Rajpal. The 50-year-old Kaul's calling is thus justified.
With 20,000 employees beyond 552 stores spanning 118 cities, the procedure is performed de rigueur 24-hour interval in and out.

CEO's 'Safe Delivery Persons' mantra
8 years in the top job as CEO of Celebrating FoodWorks, Ajay Kaul is annihilation merely a corner function stereotype. Earlier opening the Rourkela'southward firstever Domino's pizza store last April, decked upwardly in the trademark blue-andblack Domino'due south tee-cap-cargo combo, he essayed the role of an SDP to perfection.
The acronym is a homegrown term for Safety Commitment Persons, or the commitment boys, who cipher from door to door with boxes they call 'warm bags'. And the prefix 'Prophylactic' conforms to the speed governor attached to every cycle that maintains a maximum speed limit of 40 kilometres/hour.
Along with the local team, Kaul rode a Domino'south -branded Hero bicycle into every possible management with the store as the locus. They rode for 8-9 minutes in each management and returned to the store. He defines that time-bound journey the "lakshman rekha" for any SDP.
Merely the story doesn't end in that location. In the backend, materials need to move from the 180-odd business concern partners or vendors to the four factories or 'commissaries' equally they are chosen inhouse, before landing up at the stores. This is where each ingredient in the supply chain comes under abrupt scrutiny.
Kaul signed upward with Domino'southward Pizza some eight years ago but even and so, pizzas every bit a category hadn't quite caught the fancy of the average diner. "The ecosystem did non exist and at that place was no mozzarella or sauce supplier and we had to import everything initially," he points out, adding that today 100% of the procurement is localised.
Elaborating on the concatenation, Harsharan Marwah, Sr.VP-Supply Chain, Jubilant FoodWorks Limited, claims that all appurtenances in the system demand to necessarily move between 1 and four degree Celsius. "In that location are 80-90 frozen trucks dedicated to us countrywide," he says. The first step is aligning vendors to the Domino'southward way. Company executives visit each vendor regularly and Kaul emphasizes that they take to exist in sync with the vision of the visitor for the adjacent five years. In the process, some of the vendors are literally hand-held by Domino's in their growth bend.
Bottomline, the system is designed to deliver in 30 minutes with a 99.6% success charge per unit that Kaul tracks religiously every 24-hour interval. With revenues at Rs 1,017 crore (FY 2011-12) and EBITDA margins at 18.7%, the dough for sure is rise.
Nigh l% of the revenues come from casual dining and takeaway and commitment makes upwards the remaining half. Though online ordering was launched simply two years ago, information technology accounts for 15% of the delivery revenue pie. And despite launching mobile applications nearly four months back, they contribute to 2% of the delivery revenues and virtually 10% of the online sales.
